The Lowdown Venue Setting
Seminary Hill is a family-run apple orchard in the western Catskills, 2 hours north of NYC. This 65-acre estate has been in the Doetsch family for give generations, and now they're reviving and updating their roots in cidermaking. The rolling pastoral acres, winding Delaware River, and towering Catskill mountains surrounding the House and Orchards converge to form a breathtaking scene for photographs and vows.

Pick some herbs and veggies for your breakfast in the garden just outside the cabin's front door. Grab a book and sit under the sapling overlooking the valley. Wander in the orchards and take a peek at some of wild, funny names of our apple and pear strains. Take some photos, bring your dog for a romp. Sit in the rocking chairs on the wraparound patio at sunset. Enjoy s'mores around the bonfire pit.
Fun fact: The Doetsch family has roots in Callicoon that go back more than five generations. During Prohibition in the 1920s one great-grandfather distilled “apple jack” in a shed on the property—until the day he fell asleep during brewing and the shed burned down. Now we are reviving and updating the orchard-to-bottle process, which, in 2020, you'll be able to see in action. Our 65-acre estate holds winding hiking and cross-country ski trails and a fire pit. Atop the highest hill, you can see the historic St. Joseph’s Seraphic Seminary that gives our venue its name.
Weddings take place against a unique landscape depending on the season. In spring, our trees bloom delicate pink and white flowers. In summer, colorful fruits grow against deep green leaves. In autumn, apples and pears hang ripe for the picking amid vibrant fall foliage.

Design: Built from timber felled on the property, the house is simply furnished, with kilim rugs covering the wood floors. The rustic cabin boasts a two-story rustic fireplace built with stones on the property. The luxurious master suite opens onto a balcony overlooking the sprawling property and has a jacuzzi to boot. Standout Venue Features: Starting in 2020, our cathedral-ceiling tasting room can offer not just a gorgeous reception venue, but also a fun afternoon activity! You can tour our facility to learn about the complete orchard-to-bottle process and taste our distinctive ciders while enjoying stunning views of the orchard and surrounding landscape.
