Charming. Stylish. Cheeky. The Morrison is where you want to be! Fraser Short and Sean Connolly invite you on a culinary and cocktail journey through heritage Sydney. What was the old Brooklyn Hotel is now the beautifully refurbished Morrison Bar and Oyster Room. Dine with friends at communal tables in The Oyster Room, an informal affair where you can watch centre stage as Australia’s finest oysters are shucked-to-order. The Conservatory is The Morrison’s open air dining room which offers a private but stylish setting under the stars, cocktail in hand and a la carte menu to feast on. The bustling Parlour is the destination that allows you to unwind the working week surrounded by friends for as long and late as you like. The restaurant menu is grown up, created by Culinary Director Chef Sean Connolly and showcasing his international experience and signature style of seasonal produce, cooked on the bone and in the shell wherever possible. The Scene:
Built in 1912, The Morrison is a beautiful part of heritage Sydney, the building and exterior is in Federation/Art Noveaux style comprised of brick and sandstone. Enter through the front doors and take in the modern New York inspired interior of The Morrison's main bar, with it's tall concrete pillars, exposed brick walls, abstract light fittings and stone potted plants that decorate the space. Dotted around the bar are handsome Don Draper types sipping on an Old Fashioned, while across the room a young couple enjoy a bottle of champagne with a tray of fresh oysters. In the Conservatory, a large group of family and friends celebrate a recent birthday as they tuck into a feast of slow cooked Lamb Shoulder and Pork Hock, a starry nights sky can be seen above their heads. Through in the Parlour Bar, the merry chatter of a nearby group of colleagues grows as they clink their glasses and exchange secret santa gifts. Leave the hustle and bustle of the concrete jungle behind you, step inside, relax and enjoy the casual elegance of The Morrison. We welcome you to our home and playground - from your first sip, to the last bite, you will not be disappointed.

Sean Connolly is the Culinary Director, practising his love of rustic style food, eclectic cuisines, seasonal and locally sourced produce across his 4 restaurants in Australia and NZ. His signature style of home inspired cooking, using seasonal produce cooked on the bone and shell wherever possible has fast become a trademark of The Morrison’s seasonal menus. 

Being an oyster bar it comes as no suprise that The Morrison boasts a wide variety of rock, pacific and angasi oysters from the NSW, SA and TAS coastlines which are delivered daily. The Morrison serves fresh oysters throughout lunch and dinner, shucked to order and served on ice with a delightful Forum cabernet mignonette (Spain) and fresh lemon. Natural, fresh & delicious! 

When it comes to the main event, guests are spoilt for choice! No matter the affair, The Morrison always delivers delicious on quality and flavour. The crowd favourites being the Chilli Crab Linguine, handmade pasta tossed through a herby lemon butter sauce, fresh chilli and delicate crab meat. And the Grain Fed Sirloin, cooked to your preference and served on the bone with hand-rolled butter gently melting on top. The ultimate dish being the Slow Cooked Lamb Shoulder, cooked for 12hrs and smothered with a sticky sweet sauce of raspberry, star anaise and lamb jus. Add a side of thrice cooked Duck Fat Chips and crunchy Cabbage Slaw and you're away laughing!

Check out our buns! Just a few steps south of the main bar, Parlour Burger offers an eclectic menu of 7 delicious burgers and finger licking sides, local and international craft beers and milkshakes. Relaxed and friendly, Parlour is the perfect space for enjoying a cold bevvy, after works drinks or watching the game. Sean Connolly’s infamous Black Widow Burger is a huge hit – a succulent beef patty, lettuce, tomato, chipotle mayo, fresh jalapenos served on a black bun (coloured by the pigment in charcoal)!
Bars & Lounges:
The two main watering holes are the Main Bar and Parlour Bar, both serving a variety of local and international wines, spirits and beer. Take a load off and enjoy $5 drinks during the daily Happy Hour between 5-7pm and if that wasn't enough, Espresso Martini's are only $12 from 8.30pm every day of the week!

Drink specials aside, The Morrison's cocktail list The Doors of Perception is where the culinary curious meets mixology. Take for example the cocktail Riders on the Storn, a moorish blend of duck-washed Talisker whisky, blackberry jam, brown rice treacle and egg white - creamy and smooth with hints of berry, warmed with whisky and cracked pepper.

Down in the Parlour Bar, punters are treated to a selection of craft beers that would tickle any brewers fancy! From the Stone & Wood Pacific Ale from the boys in Byron, to the Brooklyn Lager from the infamous micro brewery in Brooklyn. Nothing goes better with a burger than a beer, ice cold and full of flavour.
