The natural beauty of Highland Springs Resort is just one of the reasons our property holds a special place in the hearts of so many of our guests. Love has blossomed here, vowed eternity here, and built life long memories. Our most popular ceremony site, a towering 1,100 year old Coastal Live Oak tree, is the second oldest in the world. It has borne witness to much, including weddings dating back to the 1800’s when this was a place to stop and rest for weary stagecoach travelers. Instead of walking down the aisle, take a walk down a century-old grove of olive trees that used to serve as the resort main entrance. Imagine the exquisite beauty of wedding photos taken in a purple sea of lavender fields in full bloom. A mouthwatering, gourmet meal awaits your guests with our seasonal reception menus. Dishes are designed to reflect seasonal availability of produce from local farms and prepared by our award-winning cooks at The Grand Oak Steakhouse & Bar. Although most of the 2,400 acre property is comprised of hiking trails, we also have our own certified organic farm that produces herbs, various fruits and vegetables, eggs, and olive oil. Follow in the footsteps of past visitors such as Ernest Hemingway and Albert Einstein and create a little history of your own.

Olive Grove
STRETCHES OF CENTURY-OLD OLIVE GROVES AS FAR AS THE EYE CAN SEE. The comfort of a natural outdoor room, with peeking views of the sun setting over lavender fields. The Olive Grove was originally the entrance to the resort. Every fall we harvest the olives from these trees to press our own organic olive oil.
