Saxon + Parole brings a global approach to traditional grill fare, within a warm and inviting space on the Bowery. The 112-seat restaurant – named after two prize-winning, New York-bred racehorses – features rich design elements and modernist details, paying homage to the numerous horse stables that once populated Lower Manhattan. Saxon + Parole’s multi-award winning beverage program features a fresh approach to bespoke spirits, syrups, bitters, fresh-squeezed juices, and house-made sodas, and includes Parole Whiskey – Saxon + Parole’s very own house brand of whiskey.

Design:
Designed by the award-winning AvroKO design group, the original architectural details of the (b.1863) Bowery building were preserved in the renovation, as evidenced in the columns, ceilings, and floors. These rustic, stable inspired features contrast with the second theme of 1930s’ modernism, seen in the 30,000 nickel plated furniture nails, hand-hammered into an original Bauhaus fabric pattern along the corridors

Madam Geneva is connected to Saxon + Parole physically, yet allows for a more libertine approach to eating and drinking. Madam Geneva was an 18th century name given to gin by the English, the word geneva being a corruption of the French genievre, meaning juniper. The busy lounge features over 40 artisanal gins which can be poured over crushed ice and topped with house-made preserves to create Madam Geneva’s signature cocktail.
