Food, Restaurants, Cafes:
SCOUT PNW

Daring and delicious is the mantra at Scout PNW, the most playful expression from Executive Chef Derek Simcik. The farm-to-table restaurant space, filled with plaid and Douglas fir, winks to the sartorial quirks of Pacific Northwest, while an evocative painting by local artist Robert Hardgrave invigorates the senses and ignite the appetite.

Simcik’s refreshing, welcoming style inspires a sense of discovery with every bite. The menu is committed to elevating locally-sourced indigenous foods, like hand-caught seafood from the Puget Sound, wild mushrooms foraged from the Cascade Mountains, and grass-fed beef raised in the Eastern Farmlands—all presented without pretense.

Whether you’re experiencing an elegant farm-to-table dinner oriented around one of our signature tasting menus with wine pairings, stopping by for the renowned (seasonal) courtyard party, or fueling up in classic brunch style with a custom bloody Mary, the team at Scout PNW will make sure you’ll never forget what Washington State can offer your palate.

The Cabin
For intimate private dining, we’ve created an atmospheric deconstructed wood-lined cabin for up to 20 guests. Our team of culinary creatives are on hand to mastermind custom menus to enhance your desired party vibe.

Bars & Lounges:
THE NEST AT THOMPSON SEATTLE

The boundaries between nature and nurture are purposefully blurred at The Nest, Thompson Seattle’s iconic rooftop bar, cocktail lounge, and terrace. Hovering above the urban hustle of Pike Place Market and Seattle’s downtown, The Nest embraces the heart-stopping view of Elliott Bay and the Olympic Mountain Range beyond—making it the only place that truly captures the unfolding drama of the city.

Executive Chef Derek Simcik orients the hand-crafted cocktail, wine, and small snacks menu toward seasonal produce, highlighting the ever-evolving Pacific Northwest landscape. And while the plush bar buzzes with activity, cozy fire-lit corners hidden amid lush greenery beckon those yearning for more intimate contemplation.
