A few months ago, I found myself escaping to the charming city of Healdsburg in Northern California. I quickly realized how beautifully it has evolved into the region’s premier destination for travelers who crave Michelin-starred innovation right alongside rustic, sun-drenched vineyard charm. Between the breathtaking natural beauty, the trailblazing dining scene, and the spectacular vineyards, I was completely hooked.

There is a distinct magic that happens when you leave the highway behind and let the country roads of Sonoma County take over. The air shifts. It smells of damp earth, sun-warmed wild fennel, and the sweet promise of a slow afternoon. AHH…the life! Undoubtedly, California’s wine country has always known how to throw a party, but lately, the conversation has changed. It is no longer just about pristine rows of grapevines and white-tablecloth tastings. It is about a deeper connection to the land, a return to regenerative roots, thoughtful design, and gathering spaces that feel like an open, warm invitation.

Enter Little Saint, an architectural and culinary gem tucked right into the heart of downtown Healdsburg.

For our new 🌿 Field & Country 🏸 collection, we are charting the spaces that capture the wild, untamed bounty of agrarian life and wrap it up in high design and impeccable hospitality. Little Saint fits the brief to a tee. Equal parts 100% plant-based restaurant, vibrant coffee bar, sultry wine lounge, dynamic cocktail bar, and full-scale cultural arts venue, it is a creative community powerhouse.

Born from a passionate, planetary-minded collaboration between locals Laurie and Jeff Ubben, Executive Director Jenny Hess, and legendary Creative Director Ken Fulk, Little Saint is proving that living sustainably does not mean sacrificing an ounce of style, flavor, or fun. YAY!

 

 

The Origin Story: From Iconic Shed to Living Sanctuary

To understand the soul of Little Saint, you have to look at its bones. In 2020, Laurie and Jeff Ubben purchased the building formerly known as the SHED, an award-winning, industrial-chic glass structure that had long served as an anchor for the Healdsburg community. Their goal wasn’t to erase what came before, but to grow it into something world-changing. They envisioned a farm-forward meeting ground where climate justice, animal welfare, and live music could collide. And they did just that. To realize this dream, they called in design alchemist Ken Fulk. As Creative Director, Fulk injected the massive space with his signature theatrical warmth. Think plush textures, custom murals, and dramatic floral installations that beautifully soften the industrial steel and glass frame.

The name itself pays homage to a beautiful creative kinship, honoring Ken’s own Saint Joseph’s Arts Foundation, a San Francisco-based community rooted in gratitude, performance, and shared human values. At Little Saint, when you walk through the doors, you instantly feel that collective, artistic energy. 

 

 

Field to Table: The 8-Acre Heartbeat

You cannot talk about the Field & Country lifestyle without talking about dirt. Two and a half miles down the road from the downtown building lies the true engine of the entire operation: Little Saint Farm.

When the Ubbens acquired this eight-acre property in 2020, it was a traditional, monoculture vineyard. In a deliberate act of environmental stewardship, the team pulled out the grapevines and set out to heal the land. Through a slow, restorative process involving organic compost, dense cover crops, and rich woodchips, they transformed the soil into a thriving, hyper-diverse regenerative ecosystem.

This relationship between the farm and the restaurant is completely symbiotic. The farm’s daily harvest dictates exactly what ends up on your plate and in your glass. It even populates the building’s retail floral counter and overflows from the custom vase arrangements scattered across every tabletop. It is a literal, living connection to the Sonoma soil.

 

 

A Laurel Canyon Escape in Wine Country: The Cottages at Little Saint

And if you want to extend your stay in this quaint paradise? Look not further than The Cottages at Little Saint. Nestled just behind the restaurant and steps from Healdsburg’s historic town square, this newly reimagined collection of four private cottages acts as an elevated, whimsically cool sanctuary for artists, musicians, and design enthusiasts. Count me in! 

While the encompassing landscape is pure Sonoma country, the aesthetic inside the cottages is pure 1960s and ’70s Laurel Canyon. Ken Fulk has conjured the free-spirited, communal energy of musical icons like Joni Mitchell, Crosby, Stills, Nash & Young, and The Rolling Stones. Each cottage is saturated in color and rich storytelling, loaded with custom patchwork furnishings, hand-painted checkerboard floors, vintage-inspired wallpapers, and bespoke trompe l'oeil details by painter Rafael Arana. To complete the sensory journey, every cottage features its own turntable paired with a curated vinyl collection tailored to the room’s distinct persona. So cool!

Originally built in the 1980s, the four bespoke escapes include:

  • Gimme Shelter (650 sq. ft.): This is a delightful suite for two that blends pastoral farm character with modern luxury, complete with beamed ceilings and hand-painted hardwood floors.
  • Court (1,000 sq. ft.): A moody, spacious hideaway for up to four guests, Court boasts a deep soaking tub. In a stroke of pure Fulk whimsy, it can adjoin Spark via a secret armoire doorway to create a grand three-bedroom compound.
  • Spark (375 sq. ft.): This is an inviting, studio-style retreat for two with a soaring pitched ceiling, a cozy fireplace, a private front porch, and a luxurious rain head shower.
  • Deja Vu (400 sq. ft.): A secluded cottage suite tucked at the back of the property for privacy, Deja Vu features an eclectic sitting area and a dedicated outdoor lounge space.

The Cottages at Little Saint double down on community by stocking goods made specifically for the space utilizing ingredients from Little Saint Farm. Guests will discover custom botanical hydrosols and herbal tea blends by Land + Local, alongside artisanal bath products by Herb Nerd. Set among beautifully landscaped grounds with winding paths, visitors can spend their afternoons lounging in their cottage or by a serene heated pool. 

 

 

On the Menu: Abundance Over Restriction

Let’s dispel a myth right now: a 100% plant-based menu does not mean eating raw celery sticks in a sterile room. Under the visionary leadership of chef Deborah Mullin, the culinary program at Little Saint treats vegan dining not as a list of strict limitations, but as an open-ended playground of possibility.

The menu is designed to flow from morning light to evening shadows. Because ingredients change month to month based entirely on what Little Saint Farm provides, the dishes capture exact micro-seasons. You might stop by for an early morning espresso and a flaky, plant-based pastry at the coffee bar, return for a casual, sun-drenched lunch in the lounge, and finish the night with a multi-course dinner that challenges everything you thought you knew about vegetables.

 

 

The Lowdown on the Liquid Assets

The beverage program operates with the exact same earth-first, closed-loop philosophy. The bar team collaborates directly with the kitchen to ensure absolutely nothing goes to waste. Yes, you read that right: Absolutely nothing! Imperfect produce, citrus peels, herb stems, and botanical leftovers are systematically transformed into house-made shrubs, cordials and ferments. 

  • The Cocktails: Expect reimagined, punchy versions of your favorite classics infused with wild, farm-grown aromatics. Yum!
  • The Elixirs: Teetotalers don’t fret. Non-alcoholic drinks get equal real estate here. The menu boasts an incredible, rotating selection of herbalist-inspired tonics, active ferments, and complex adaptogenic elixirs that stand proudly alongside any spirit-forward drink.
  • The Wine Offerings: A curated list highlighting emerging makers, organic viticulture, and local champions who share the same commitment to planet earth.

  • Wine Lounge: This is the ultimate moody, intimate corner.  The Wine Lounge is ideal for casual tastings, low-slung conversations, or a pre-dinner toast.
    • Capacity: 20 standing or 16 seated
  • The Salon: This space is a gorgeous, beautifully lit space perfect for targeted workshops, presentations, or private family-style dining.
    • Capacity: 40 standing or 25 seated
  • First Floor Buyout: Want to command the entire ground floor? A full buyout opens up the entire room, allowing guests to drift between the bars, the marketplace, and the lounge areas in one massive, high-energy indoor festival.
    • Capacity: 250 standing or 100 seated

Second Story Spaces

  • The Living Room: This room is designed to feel like an impossibly stylish country estate loft. It’s ideal for cocktail mixers, cozy panels, or acoustic sets.
    • Capacity: 50 standing or 30 seated
  • The Second Story Terrace: An outdoor breath of fresh air. Take your guests outside to sip closed-loop cocktails under the pastel Northern California skies. 
    • Capacity: 30 standing or 25 seated
  • The Second Story Full Buyout: This is where Little Saint’s live music and cultural arts heart beats the loudest. The entire second floor is a massive, flexible, beautifully acoustic floor capable of hosting large-scale galas, live concerts, heavy receptions, or dramatic seated feasts.
    • Capacity: 280 standing or 100 seated
