Located in the heart of the picturesque seaside village of La Jolla, California, The Hake Kitchen & Bar provides a unique gathering space for locals and visitors alike to enjoy global and Latin-inspired cuisine with sophisticated service in a welcoming, relaxed atmosphere. The 3,400 square foot restaurant draws design inspiration from the existing natural elements in the building, providing guests with the innate ambiance of a timeless neighborhood establishment. An eclectic array of vintage finds sourced from local salvage and design stores add an element of warmth to the restaurant’s traditional bistro atmosphere.  Additionally, exposed wood and mirrored accents enhance the space’s clean, airy design aesthetic. Allowing guests to enjoy the city’s desirable weather year round, the restaurant presents patrons with two outdoor seating areas including a quaint olive tree-lined patio beneath La Jolla’s bustling Prospect Street.

The Hake reflects a culmination of inspired dishes served at OBT’s portfolio of popular restaurants located throughout Mexico City. Managing partner Ricardo Dondisch and accomplished executive chefs Frederico Rigoletti and Roberto Craig are known for their passion for honest dishes – an unmasked use of high quality local and sustainable ingredients that are meant to be enjoyed in their freshest form.
 
With a heavy emphasis on seafood preparations, The Hake is aptly named after a slightly sweet yet mild white fish found in the Atlantic and Pacific oceans, most popular on menus in Europe and predominantly Spain. The restaurant’s approachable, yet modern interpretations showcase fresh seafood through an internationally inspired assortment of dishes, highlighting Mediterranean, Latin American, Asian and Baja Med influences. Serving lunch and dinner, menus are divided into several categories, comprised of Snacks, traditional Tiraditos, or lightly dressed sashimi style preparations, Appetizers and Main Courses. Highlights of the easily shared dishes include the Hamachi Tiradito with miso, jalapeño and garlic chips, the Ahi “Tacos” with jicama “tortilla,” avocado, ponzu, cucumber, jalapeño, relish, Sriracha and sesame seeds and the Roasted Octopus with olive oil poached potatoes, spicy mayo and smoked paprika. Additional culinary standouts include the Catch of the Day served “Talla-style” prepared with smoky guajillo rub, refried beans, radish, carrot, red onion and corn tortillas, the 12oz Grilled Pork Chop with currant-balsamic glaze, apple-fennel slaw and blood orange vinaigrette and the decadent Key Lime Semifreddo with basil cream and Meyer lemon gelato.
 
Bars & Lounges:
Complementing the inventive, chef-driven menu is The Hake’s thoughtfully curated and versatile wine program. The impressive wine collection is comprised of nearly 100 red, white, rosé and sparkling wines from both Old and New World vineyards - “Old World,” representing the traditional winegrowing regions of Europe and “New World,” featuring varietals and blends from vineyards that are relatively new to wine production. In addition to the substantial bottle list, The Hake’s extensive selection of 32 wines by the glass includes a variety of premium red and white wines including Fogdog by Joseph Phelps, Chateau Montelena and Illumination by Quintessa, typically only offered by the bottle.
 
In addition to the comprehensive wine list, The Hake also features distinctive seasonal handcrafted cocktails from beverage curator Joan Villanueva, including the Two-Twelve made with Woodford Reserve Bourbon, Cynar, Ancho Reyes and Angostura Bitters. The restaurant also serves five rotating local beers on draft and boasts one of the most notable mezcal selections in the city. With 15 different selections of the smoky spirit, primarily distilled in the agave growing region of Oaxaca, each is served traditionally with an orange slice and ‘sal de gusano,’ a blend of ground agave worms, salt and chili powder.
