If cinnamon pancakes, crab and avocado eggs Benedict and a glass of rosé sangria aren’t enough to get your brunch wishlist started, maybe we should just let you know that this spot serves one of their best cocktails in a bird-shaped glass. At this imaginative eating and drinking destination, expect the unexpected. From smoking mushroom rye served in a terrarium to charred octopus served on a sauce fashioned to mimic the texture of coral, you can bet your brunch at Botanist is going to be one for the memory banks.

Marie Design is modern, risk-taking, feminine, and elegant all at once. Think blush pink hues complemented by lots of neutral blues, brassy elements, lively greenery, and subtle botanical pattern play. Authentic to its botany-based roots, there’s an adjacent garden with over 50 types of plant species on view. And if that’s not enough wow factor, there’s also a champagne lounge, and we all know brunch is never complete without bubbly.

Botanist is located inside the Fairmont Pacific Rim, just near the Vancouver Convention Center, Stanley Park and Granville Island Public Market.
